The Structure of the Caratello
Caratelli, as they are called primarily in Tuscany but also in other Italian regions, are wooden barrels essential for the production of Vin Santo.
But what are they exactly?
They are small barrels, typically between 25 and 150 liters in size. Caratelli should be built by a cooper, according to precise rules that only experienced coopers can master, as their structure and the wood used must withstand very high pressures over time. Therefore, their construction frame, wood thickness, and hooping will determine better future yields.
The Woods Mostly Used for High-Quality Caratelli
The seasoning of the wood is of fundamental importance. Renzi, a craftsman cooper, recommends seasoning by drying the wooden planks in the open air, that is, naturally, without the aid of artificial dryers.
The most commonly used wood is Slavonian oak, but other woods are also used, such as chestnut, which is highly tannic, black locust (acacia), and the sweetest cherry.
Caratelli Capacity
As mentioned above, caratelli are small wooden barrels. Their capacities typically range from 25 liters to 150 liters, although 50 to 100 liters are the most common.
Vinsantaia
This is the name given to the caratelli room, where the seasons, temperature changes, micro-oxygenation, and the aging processes contribute to the evolution of Vin Santo. The caratelli can be positioned on standard supports or bases created by the cooper, or upon request, to maximize the space in the Vinsantaia, they can be custom-built to fit the cellar.
