he Cooper: An Experienced Craftsman.
The figure of the cooper or Master Cooper is increasingly rare these days, as it is a profession—or rather, an art from another era—on the verge of extinction.
The craft of building and maintaining barrels requires a wealth of experience, spanning countless years. Knowledge is often passed down from father to son, like the Renzi Francesco Artigiano bottaio company, founded way back in 1546. The Renzi family’s history is one of the oldest companies in Italy.

The barrel is subject to temperature changes.
If left empty after use, barrels will likely require maintenance. The metal hoops will loosen, so the cooper’s job will be to re-clinch the hoops, re-attaching the staves, thus reinforcing the barrel’s stability.

Another maintenance task for the cooper is to check the metal hoops for corrosion damage over time. Iron hoops can be adversely affected by the humidity in the cellar, causing erosion.
Acetic acid, especially for barrels used for balsamic vinegar and other vinegars, is a particularly problematic element. This acid, interacting with the hoops, will damage them. The cooper will carefully inspect them and, if necessary, replace them or perform maintenance and repairs. To address this problem, Renzi, the artisan cooper, uses hoops made of special stainless steel that resists corrosion over time for his TOP series barrels.
Replacing staves or bottom sections
The cooper, using his experience, must be able to evaluate and create new staves or sections of the vertical bottoms of the barrel. This maintenance is very important if one or more staves have defects, visible sweating, or other imperfections.
The art of constructing and replacing barrel parts during maintenance requires extensive experience from the artisan cooper, who must manually create a perfect stave to replace the defective one.
The cooper’s experience at the customer’s disposal
The artisan cooper Renzi offers his experience to maintain wine barrels, Vinsanto barrels, balsamic vinegar barrels, and spirits barrels. He understands that not all barrels will be able or cost-effective to maintain. In some cases, expert advice will be crucial for the customer in deciding how to proceed with their barrels, where the seal has become precarious.
