INTRODUCTION
We would like to share a fundamental aspect with you: balsamic vinegar barrels, whether for hobbyist or professional use, are subjected to considerable natural stress. It is therefore essential to choose the highest-quality barrels to mitigate the impact of these stresses over time. Furthermore, since these containers are designed to last for many years (or even generations), quality construction represents a true investment in the future.
NATURAL STRESSES ON BARRELS
Some information we consider necessary and very useful…
It is important to emphasize that balsamic vinegar barrels or sets should never be replaced for many years or even generations, as they will be constantly subjected to significant natural stresses throughout their life cycle. Here are the most significant ones:
Temperature fluctuations between summer and winter are not beneficial to wooden staves: since it is a living material, wood is affected. Therefore, a long natural seasoning of the wood is a fundamental quality factor (the “TOP” series barrels use naturally seasoned wood, up to 8 years).
Another factor to consider is that cooked must or balsamic vinegar tends to thicken over time, subjecting the barrels to greater stress. The cooper’s extensive experience and assembly technique are crucial.
The acidity of balsamic vinegar can corrode metal hoops. Renziartigianobottaio has found a solution: making the hoops from a special stainless steel that is resistant to acetic corrosion over the years. This means you no longer have to worry about this problem with the TOP series barrels, which are equipped with these special hoops!
These are the three main stress factors to which balsamic vinegar barrels are subjected: Our advice, therefore, is to focus on the highest quality for the future.
WHAT IS THE TOP FILLING HOLE OF BALSAMIC BARRELS MADE OF?
The top filling hole is square in shape, and each barrel is equipped with a specially designed cap to prevent air from completely sealing off.
HOW MANY BARRELS ARE IN A BATTERY?
In Modena, a battery is defined as such if it consists of at least 5 barrels. It is obviously possible to create customized sets or batteries, based on the number of barrels needed for home or professional production. The best sequence of woods and the total capacity in liters will be evaluated. At renziartigianobottaio, an expert from the team will be available to the customer during the pre- and post-sales consultation to recommend the most suitable solution.
HOW MANY WOODS/SPECIES NEED TO CREATE A BATTERY?
Even for this aspect, there is no real rule, you can use all the available essences, or just some of them, based on personal preference.
HOW MANY LITERS SHOULD THE TOTAL CAPACITY OF THE CASE BE?
It will depend on the objectives you are trying to achieve, meaning that the size of the barrels’ capacity will be determined by:
The quantity of balsamic vinegar you wish to produce
The space available in the vinegar room
The need to achieve greater or lesser density during maturation.
The length of aging time you wish to adopt.
Available capacities (liters) for the TOP Series barrels: 10-13-16-20-24-30-40-50-60-75-85-100…
HOW TO PURCHASE A CASE?
The barrels (the case) can be purchased all in one optimal solution, or for those wishing to spread the costs over time, you can start with just one, two, or three smaller barrels, then adding the remaining ones until the case is complete.
WOODS:
Here’s some information about the characteristics of woods. All woods are slightly porous, but some are more so than others.
OAK: hardwood, vanilla notes, the “CLASSIC” type.
ROBINIA (ACACIA): very hardwood, shaded color.
ASH: medium-hard wood, light, very delicate, slightly vanilla-like. POROUS +
CHESTNUT: medium-hard wood, richer in tannins.
CHERRY: softwood, fruity and aromatic notes. POROUS +.
MULBERRY: very softwood, promotes greater oxygenation during the aging of liquids. POROUS +.
JUNIPER: wood with very hard fibers, very aromatic, intense and spicy, and non-resinous; those of a quality suitable for barrel making.
“MATHER BARREL” OR “BADESSA BARREL”
This is not a mandatory barrel for producing balsamic vinegar, but if you want to enhance the aging process, it may be worth considering a Mother Barrel or Badessa Barrel. This is a larger barrel than the largest in the battery; this barrel will be used to feed one or more batteries, depending on its size.
TOP SERIES BARRELS – BATTERY
Solid wood thickness, approximately 35/40 mm (ADVANTAGES: resistance and robustness of the staves under pressure); very long natural wood seasoning, up to 8 years (ADVANTAGES: greater stability of the staves during temperature variations between summer and winter; it should also promote better and more intense transfer of aromas and fragrances during aging); high-quality construction and internal and external finishes, and over a century of experience in the balsamic barrel (ADVANTAGES: superior assembly and manufacturing, for better performance in the future). The hoops are made of a special stainless steel (ADVANTAGES: durable and resistant to severe acetic corrosion).
