The use of handcrafted wooden barrels offers superior structural and organoleptic advantages thanks to the quality of the selected materials, the longer seasoning of the wood, naturally in the open air (not in artificial or mechanical drying rooms), and the traditional construction techniques passed down from master coopers (@renziartigianoboittaio has been passing down the art of coopermaking from father to son since 1546), which promote optimal maturation of the product.
Natural Micro-Oxygenation
An important advantage is the porosity of the wood, which allows for a constant exchange of oxygen with the outside.
