Usually, several small barrels are arranged in a neat row in Vinsantaia<\/b>. It’s recommended to create batches of barrels<\/b> made entirely of oak,<\/b> followed by others made of chestnut<\/b>, and others made of cherry, or robinia (acacia)<\/b>. This makes it easier to distinguish and differentiate the aromas of the various woods. This will result in evaporation, oxidation, and then the mother, which serves as a deposit for the aged yeasts in the barrel.<\/p>\n
