Summer: The Time of Evaporation and Concentration<\/b><\/p>\n
Summer is the heat engine of the vinegar factory. The intense heat of attics and lofts activates the evaporation process of the water contained in the must.
\n\u2022 What to do: Keep the bungholes (the top openings of the barrels) open, covered only with the appropriate linen or heavy cotton cloths.
